APPLE BREAKFAST DISH

1 cup brown sugar
1/2 cup butter
2 tablespoons corn syrup

2 tart apples, sliced
1 loaf French bread
5 eggs
1/2 cup milk
1 teaspoon vanilla

In medium saucepan, cook brown sugar, butter, and corn syrup until syrupy.

Spread in greased 9 x 13-inch pan.

Slice and arrange 2 tart apples over the sugar syrup in pan.

Cut French bread into 3/4-inch slices. Layer bread over apples.

Beat 5 eggs every well. Add milk and vanilla and mix together. Pour mixture over bread slices in pan. Cover with plastic wrap and let stand in refrigerator overnight.

Bake at 350 degree for 40 minutes. To server, invert each helping.
Makes 12 servings.

GLAZED DUTCH APPLE CAKE

1 1/2 cups sugar
2 cups apples, unpeeled, but diced
2 eggs, beaten
1/2 cup vegetable oil
2 cups flour
2 teaspoons baking soda
1/2 teaspoon salt
1 teaspoon vanilla
1/2 cup nuts, chopped

2 cups apple juice

In mixing bowl, place diced apples and sugar. Let stand for 15 minutes. Then stir in eggs, oil, dry ingredients, and vanilla. Blend in nuts. Pour into greased and floured angel food cake pan or Bundt pan.

Bake at 350° for 50-60 minutes. Let cake cool in pan for 15 minutes, then invert on serving plate. Prick cake with toothpick and pour Hot Glaze over cake. Serve warm or cold.

Hot Glaze: Boil 2 cups apple juice over medium heat until reduced to 1 cup. Pour while hot over cake.
Yield: 24 servings

THREE-FRUIT SALAD

1 red Delicious apple, unpeeled, cut in small pieces
1 banana, peeled and sliced
1.4 cup pineapple chunks, drained

Combine fruit and serve with following dressing:

1/4 cup plain yogurt
1 tablespoon pineapple juice
1 teaspoon sugar

Blend ingredients and pour over fruit. Sprinkle dash of nutmeg on top. Serve fruit salad on bed of lettuce.
Makes 4 servings
