What To Do With All Those Apples?

Chef Crombie here helping you answer the question of what to do with all the apples you bought this week-end. The apple harvest is plentiful this year and you must fill your larder with all things apple while they are at their best.

Whether you have a bushel, a peck, or only a pound of apples, this apple cookbook by Lee Jackson will put you on the path of heavenly bliss. From the Apple Orchard – Recipes for Apple Lovers has over 150 fabulous apple recipes from which to choose. You will find a vast assortment of pies, cakes, and desserts but also so much more. There are apple salads and relishes and compotes, coolers, fizzies and breads; jams, jellies and butters.

There are even a few ethnic recipes such as Apple Kolache (p. 62-63) and Apple Strudel (p. 116). One of my favorite recipes is the Apple Pandowdy on p. 148.

Simple Rhubarb Recipe Kids Will Love to Make

Here is an easy dessert kids will love to make for their Mothers this week-end. The only difficult part is having the rhubarb. Hope you have a plant or two in your backyard. If not, stores should have it for sale. Then it is a quick job to put together, bake, and enjoy. It’s colorful, too.

Rhubarb Dessert

4 cups rhubarb, chopped in 1/2 to 1- inch pieces
1 cup sugar
1 package strawberry Jello
1 yellow Jiffy cake mix
3/4 cup water
1/2 stick butter, cut in small pieces

Grease a 9 x 9-inch pan (NOT 9 x 13-inch). Place chopped rhubarb in bottom of pan.

Sprinkle sugar over the top of rhubarb.

Sprinkle 1 package strawberry gelatin over top.

Sprinkle cake mix over top.

Dribble water over top.

Place dobs of butter on top.

Bake 30 – 40 minutes in 350 degree oven

Dessert for Company

This is the dessert I served for my women’s group yesterday. It was the day after my birthday – the reason for the flowers. I was happy to share flowers, and dessert, with company.

The recipe is very easy and young cooks will enjoy the crunching and rolling needed for making crumbs.

Oreo™ Ice Cream Dessert

24 Oreo™ cookies,crushed

1/2 stick butter, melted

1/2 gallon vanilla ice cream

1 (15-ounce) can Eagle Brand™ condensed milk

1 stick butter 1 (8-ounce) can Hershey™ chocolate syrup

1 (8-ounce) carton whipped topping

Place 24 cookies into a plastic bag. Use a rolling pin or wooden masher to crush the cookies into rather fine crumbs. Place them in a 9×13-inch pan.

Melt 1/2 stick butter and pour this over the crushed cookies. Stir a little to distribute the butter throughout. Place in freezer for about 30 minutes.

Soften ice cream and place over the crumbs, smoothing the top. Return to freezer for about 30 minutes.

Meanwhile, make the sauce: Combine the condensed milk, 1 stick butter, and chocolate syrup in a saucepan. Bring to a low boil and then simmer for 5 minutes, stirring often to prevent it from burning at the bottom.

Pour sauce over hardened ice cream and pop back into freezer. Except the pan keeps getting heavier and heavier each time so handle with care. Freeze again for about 30 minutes.

Top with whipped topping and sprinkle a few of the crumbs from the bag over the top of the dessert. Cover with foil.

When you are ready to serve, take it out of the freezer for about 20 minutes before cutting and serving. You will have a very elegant dessert.

Get on the Citrus Wagon with This Orange Delight

I just came from the store and saw they had tons of oranges and grapefruits. I bought some red grapefruits and they are oh, so tasty and good! Had enough oranges so didn’t buy any.

Since I had a good supply of oranges, I’ve been enjoying making fresh orange juice and smoothies, and adding oranges to salads, meats and desserts.

Here is a simple but very fancy dessert using oranges that I often make. I hope you will like it, too. So go ahead, get out some showy tall glasses or dessert goblets and surprise your family with this elegant dessert:

Fluffy Orange Parfait

If using fresh oranges, separate and save segments from one orange.

1/4 cup fresh squeezed orange juice
or prepared unsweetened orange juice
1 package (1 tablespoon) unflavored gelatin
1 3/4 cups orange juice
1/2 pint whipping cream

Add gelatin to 1/4 cup orange juice and wait a few minutes to allow the gelatin to dissolve.

While gelatin is resting, pour 1 3/4 cup orange juice into medium size pan and bring to boiling point. Gradually add gelatin, stirring gently until gelatin is dissolved.

Cool and then refrigerate until mixture is slightened thickened.

At this point, pour whipping cream into a deep bowl and beat with electric beater or rotary beater. Beat until cream is light and fluffy but don’t beat too long or it will turn into butter. When mixture is fluffy, slowly add cooled gelatin mixture and beat at low speed until it is blended throughout.

Spoon into parfait glasses, goblets, or other dessert-type dishes and refrigerate until firm.

When ready to serve, top each dessert with three segments from orange or use canned Mandarin orange segments.

Simply delightful!
