Be aware and beware

With that latter thought in mind, we’ve developed an infographic to highlight the top 10 GMO (genetically modified organism) foods to avoid, in no particular order:

1. Zucchini: It goes without saying that many biotech companies say genetically modified foods are safe for you, but as GMO science expands, researchers are finding more evidence that such foods can harm your health. One of those is zucchini. While not as potentially harmful as other GM foods, zucchini is nonetheless “engineered” to resist some strains of virus.

2. Cotton: Considered a food item because its oil can be consumed, cotton – in particular, genetically modified Bt cotton, common to India and China – has damaging consequences. According to recent Chinese research, while Bt cotton is capable of killing bollworms without the use of insecticides, its decreased use has increased the presence of other crop-harming pests. Also, Bt cotton production has been linked to drastic depletion of soil nutrients and lower crop yields, as well as much higher water requirements.

3. Canola: This is probably one of the most misunderstood, misguided “healthy” food choices out there right now, but there is little about canola – and similar oils – that is good for you. Extracted from rapeseed, canola oil and others must be chemically removed from the seeds, then deodorized and altered, in order to be utilized in foods. They are among the most chemically altered foods in our diets.

4. Aspartame: An artificial sweetener found in a number of products, aspartame – discovered by accident in 1965 by a chemist testing an anti-ulcer drug – accounts for as many as 75 percent of adverse reactions to food additives reported to the Food and Drug Administration (FDA), according to some reports. Some seizures and even some deaths have been blamed on aspartame.

5. Dairy: A disturbingly high number – as many as one-fifth – of dairy cows in the U.S. today are given growth hormones to increase milk production, a figure that has been rising since the FDA approved a genetically engineered recombinant bovine growth hormone known as rbGH or rbST for use in dairy cows in 1993. While said to boost production by 5-15 percent, scientists have expressed concern that the increased levels of IGF-1 (insulin growth factors-1) from hormone-treated cows may boost the risks of colon and breast cancer. Since 2008, Hiland Dairy has stopped using milk from dairy farmers who inject their cows with growth hormone.

6. Corn: Modified now to create its own insecticide, as many as half of all U.S. farms growing corn for Monsanto are using genetically modified corn, with tons of it now being introduced for human consumption, according to the FDA. Doctors at Sherbrooke University Hospital in Quebec recently found Bt toxin from modified corn in the blood of pregnant women and their babies, as well as in non-pregnant women.

7. Papayas: Genetically modified papayas have been grown in Hawaii commercially since 1999, designed to combat the Papaya Ringspot Virus. Approved for sale and consumption in the U.S. and Canada, GM papayas cannot be imported or sold in the European Union.

8. Sugar: Sugar from genetically modified sugar beets hit the market in the U.S. in 2009. They were modified by the Monsanto Corporation to be resistant to the company’s Roundup herbicide. In 2010 a group of Oregon farmers sued to stop planting that year of Monsanto’s genetically altered sugar beets over fears the crops could cross-contaminate other nearby fields.

9. Soy: Like other foods, soy, too, has been genetically modified to resist herbicides. Soy is included in soy flour, tofu, soy beverages, soybean oil and scores of other products, especially baked goods and pastries. According to one report, “[a]fter feeding hamsters for two years over three generations, those on the GM diet, and especially the group on the maximum GM soy diet, showed devastating results. By the third generation, most GM soy-fed hamsters lost the ability to have babies. They also suffered slower growth, and a high mortality rate among the pups.”

10. Yellow squash Like zucchini, yellow squash is also a fast-rising GMO crop in the U.S., and as such, should cause you concern. If you like squash – and scores of Americans do – check out a farmer’s market that doesn’t sell GMO squash or grow your own using non-modified seed.

Buffets are loaded with lots of food. Where to begin? Diners often feel they need to sample a little of everything. But this leads to heaping platefuls of food. And this adds to weight and health problems.

Being selective matters. But it’s not the easiest to accomplish, so here are some pointers:

Start with fresh green vegetables and juicy fruits. Make this your greatest portion of the meal. Find the different greens: spinach, romaine lettuce, leafy greens, and carrots, peas, and other. Top with only a small amount of a light olive oil dressing, or better yet, taco dressing or other less fatty dressing. Fruits are so colorful and tasty – add the apple, orange, strawberries, melon, berries, peaches, kiwi, and other fresh fruits. Use as a dessert, if desired. These are the food products where you’ll get your most plentiful and best vitamins and carbohydrates, as well as other nutrients.

Minimize animal-based products. Studies indicate that the lower the percentage of animal-based foods that are consumed, the greater the health benefits. You will still be getting your protein through green plant foods.

Are there any cooked vegetables or brown rice or whole wheat pasta dishes? These can be good choices.

Is there a vegetable based soup? This makes a perfect accompaniment.

Nuts and seeds are good in moderation.

Pass on any deep-fried foods and sugar.

Are you feeling deprived with all the other food available? Just like in the grocery store or other restaurants, you can’t eat everything, so be selective. You will still be satisfied, but best of all, you will feel good about yourself and your healthy food choices.

Who is the decision-maker when it comes to food choices? Is it the school? government? family? children?

Ground rules for this go something like this:

Parents should have the final word about what foods are bought and used for meals and snacks. It’s the parents who need to make healthy choices about foods for themselves and their family. This is for foods eaten at home or outside the home. It’s important to choose nutritious foods so that the goal for healthy food is met each day.

Buying crispy vegetables and fruits instead of cookies, chips and dips is a better trade-off. You can find already cleaned carrots, green beans, and grape tomatoes ready-to-eat. Add some raw broccoli and there is enough goodness for a salad or snacks for awhile.

The same can be done for fruits. Some require a little more preparation. For example, cutting up apples and oranges and putting them in little plastic bags or glass dishes in the refrigerator takes more time but is worth it.

Within reason, children should decide on the amount of food they want to eat at meals and snacks. Some guidance may be necessary, depending on the age of the children. Some families are concerned about children eating too much, while others worry about children not eating enough.

Always talk with your child about why they are choosing not to eat. Try to keep the communication open about food.

Eating should be a pleasant experience. Food should not be used as a reward or punishment. Make mealtimes an important and essential part of the day.

good diet. What do you think people will look like in eight years because of what they eat? Do you think people will take all this talk about poor eating habits in our country and make changes in their diets or will they continue on as before?

I will make a prediction. I feel people still are not realizing the power of food and therefore will not pay attention UNLESS they are affected by sickness and disease. Then it may be too late.

We need to make better-informed decisions about what to eat. But what is a good diet, you ask? You probably know, but here are some main points:

  • Includes pesticide free fruits and vegetables eaten as close to their fresh, natural state as possible.
  • Minimizes meat or animal products, including milk.
  • Includes beans and legumes in moderation.
  • Includes nuts and seeds in moderation.
  • Eliminates or greatly reduces foods that have been processed, manufactured, or microwaved.
  • Eliminates fried foods or those cooked at a high temperature.
  • Eliminates genetically modified food such as corn, soy, or sugar from GM sugar beets.
  • Eliminates all sugar and high-fructose corn syrup.
  • Eliminates aspartame or other chemical food additives.
  • Eliminates modified, unnatural ingredients such as hydrogenated oils.
  • Eliminates soda pop – adds more water.

Think what changes a healthy diet would make for our country. Health care cost would go down. Many of current diseases such as cancer, heart disease, diabetes, obesity, etc. would be eliminated or greatly reduced. Less sick leave and a more productive work force. Children better able to learn in school. Lack of good diets and proper nutrition may even be a reason for losing world leadership ability.

There are many health-conscious individuals who are concerned about what goes into their food and into their body. However, we need to continue to spread the word to more people and take action ourselves.

I challenge you to see what others are putting in their grocery carts at the store. I’m often mind-boggled by all the pop and chips going out the door.

Tortilla Treats

1 (7-inch) soft tortilla
1/2 teaspoon Dijon or other mustard
1/3 cup grated Cheddar cheese
1 green onion, sliced

Spread mustard on tortilla. Sprinkle with cheese and onion. Heat in pan until cheese has melted and then roll up. Or you can roll up and wrap in foil. Bake at 350 F for 10 minutes. Cut in half. Dip in salsa.

“Personal” Trail Mix

1 cup oat cereal such as Cherrios
1/2 cup whole-wheat pretzels
1 cup small cheese crackers
1/2 cup chopped walnuts or peanuts
8 oz. sunflower seeds
1/4 cup dried cranberries

Mix, pack in little baggies, or store in air-tight container, and you’re set.

for families to instill healthy eating into their meal
plans.

The cheapest and easiest foods are those that
are normally the least healthy. If you give your child
the choice between healthy food and junk food, you
probably won’t like the results.

Even though it isn’t possible to get a child to like
all healthy foods, there are some ways to get your child to try them.
Hopefully, they will like at least a few of them.Getting kids to eat healthy
can be a daily challenge.

- Call fruits and vegetables by funny names. You
can refer to broccoli as “trees”, making them
more fun to eat. Spinach makes big and strong
muscles, according to Popeye. There are many
different names you can call fruits and vegetables,
even making up your own if you prefer. Most kids
prefer to eat foods that sound fun.

- Enhance the flavor of foods. Ranch dressing is
great for broccoli, while peanut butter is a great
topping for celery. There are several combinations
for vegetables that can make them taste more
acceptable. You can let your young child pick a
topping for a vegetable, even if it’s something
you wouldn’t normally like yourself.

- Dress the vegetables up. Just as much as calling
them names help kids eat healthy foods, making them
look funny also helps.You can do this by making
funny designs on the plate, or setting them up to
look like people, such as a stick person with little
carrots for a body. Although some parents don’t like
their kids playing with their food, sometimes it helps
to get them to eat healthier.

- You might even be able to include foods that
are not their favorites into different dishes. If
soups with ‘not so favorite’ vegetables are being
prepared, by pureeing the soup, who knows what
vegetables are there? Spinach can go on top of
pizza. Apples and bananas can go into muffins,
undetected.

There are several ways to help your kids eat
healthier, but to make them enjoy it also has to
be fun as well. This isn’t always an easy task.
It can however, be done with a bit of creativity.
Hopefully, doing this will help your child develop
a love of healthy foods for the rest of their lives.

Then too, more schools (elementary and secondary) need to focus on classes that include nutrition and healthy eating. Too many classes that taught these subjects have been eliminated. And what could be more important than learning about food and how important it is for healthy living?
