APPLES, APPLES EVERYWHERE—FAVORITE RECIPES FROM AMERICA’S ORCHARDS is everything you would expect of a regional apple cookbook. It highlights the lives and work of hundreds of the country’s largest apple orchards, as well as small family entrepreneurs —many of the orchard traditions go back 4 and 5 generations. You will read about the struggles and triumphs of some of the great pioneers in the apple industry and the apple varieties that made them great. You can sample their choice recipes, some being written down here for the first time.
Recipes for all tastes and seasons have been collected from the orchards’ own kitchens. Not only is there a wide variety of recipes for desserts, pies, cakes, and cookies, but this apple cookbook gives lots of uses for cider and apples in beverages, breads, salads, main dishes, and accompaniments. Techniques for making apple butter in large or small quantities, as well as directions for drying apples are given. Included is the healthier way to bake by substituting applesauce for fat in some recipes.
A love of the orchard and all things “apple” prompted Lee Jackson to write her second apple cookbook. Her first book, FROM THE APPLE ORCHARD – RECIPES FOR APPLE LOVERS continues to be a classic in its field. She is a home economist who taught family and consumer sciences in Wisconsin and Missouri high schools (two states noted for their apple production). She now writes about food, children, parenting, careers, and other subjects related to the home.
